Ingredients

  • 2 cloves garlic
  • 2 tablespoons chopped parsley (8 grams)
  • Pinch sea salt
  • 2 tablespoons extra virgin olive oil (30 ml)
  • 4 cage-free organic eggs
  • 4 cloves garlic, thinly sliced
  • 1/4 cup extra virgin olive oil (60 ml)
  • Pinch sea salt
  • Dash black pepper

Instructions

  1. Step 1: Make the parsley-garlic sauce by adding 2 cloves of roughly chopped garlic to a mortar along with a pinch of sea salt and 2 tablespoons of chopped parsley. Use a pestle to pound the mixture into a rough paste. Drizzle in 2 tablespoons (30 ml) of extra virgin olive oil, mix until combined, and set aside.
  2. Step 2: Heat a small to medium-sized frying pan over medium heat. Add 1/4 cup (60 ml) of extra virgin olive oil and let it heat until hot but not smoking.
  3. Step 3: While the oil heats, thinly slice the remaining 4 cloves of garlic. Crack the eggs into small bowls, two per bowl if possible, to add quickly to the pan.
  4. Step 4: Add half of the sliced garlic to the hot oil and stir for 30 to 45 seconds until the garlic begins to turn golden. Immediately add 2 eggs to the pan, spoon the sautéed garlic over the eggs, and let them fry undisturbed until the bottoms are crisp and golden, about 1–2 minutes.
  5. Step 5: Carefully spoon some hot olive oil over the egg whites for a few seconds to finish cooking. Once set, remove the eggs and garlic slices from the pan, allowing excess oil to drip off.
  6. Step 6: Repeat the frying process with the remaining garlic slices and eggs.
  7. Step 7: Place the fried eggs on serving plates. Season generously with sea salt and black pepper. Drizzle the parsley-garlic sauce over the eggs and serve immediately.

Tips & Variations

  • Use fresh, high-quality olive oil for the best flavor.
  • For a milder garlic flavor, reduce the amount of sliced garlic or sauté it more gently.
  • Add a sprinkle of smoked paprika or chili flakes for a spicy kick.
  • Serve with crusty bread to soak up the garlicky olive oil.

Storage

Spanish Garlic Eggs are best enjoyed fresh. If needed, store leftovers in an airtight container in the refrigerator for up to 1 day. Reheat gently in a pan over low heat to keep the eggs tender and avoid overcooking.
