Pork in Duvets Recipe
Introduction
Pork in duvets is a delicious twist on the classic sausage roll, wrapped in crispy streaky bacon and flaky puff pastry. This easy recipe results in golden, savory treats perfect for snacks, parties, or a comforting meal.

Ingredients
- 8 rashers streaky bacon, finely chopped
- 320g sheet of ready rolled all-butter puff pastry
- 6 pork sausages
- 1 egg, beaten
Instructions
- Step 1: Preheat the oven to 180°C (160°C fan)/gas mark 4. Spread the chopped bacon evenly over an oven tray and bake for 5 minutes until the bacon is crisp. Remove from the oven and allow to cool.
- Step 2: Unroll the puff pastry sheet on its baking parchment. Cut it in half lengthways to form two long rectangles. Twist each sausage in the middle, then place half of the sausages end-to-end along the center of one pastry rectangle. Sprinkle half of the crisp bacon over the sausages.
- Step 3: Brush the long edge of the pastry closest to you with some beaten egg. Repeat the sausage and bacon layering on the second pastry rectangle, brushing the edge with more beaten egg too.
- Step 4: Fold the unglazed edge of each pastry piece over the sausage filling, tucking it snugly against the sausages. Then fold the glazed edge over the top to overlap and gently press to seal along the length.
- Step 5: Turn each sausage roll over so the sealed edge is underneath. Gently squeeze the pastry around the sausage filling to enclose it completely and press in at the ends and the sausage twists. Using a sharp knife, cut where the sausage dips create natural divisions, ensuring each roll contains a whole sausage piece.
- Step 6: Carefully transfer the sausage rolls, still on their parchment, onto a baking tray. At this stage, they can be frozen on the tray and then transferred to a freezer-safe container once solid. They can be frozen for up to three months.
- Step 7: Brush the tops of the sausage rolls with the remaining beaten egg and sprinkle with a little sea salt. Bake for 25-30 minutes until golden brown. If baking from frozen, extend baking time to about 40 minutes.
- Step 8: Allow the rolls to cool for at least 10 minutes before serving to let the filling set slightly.
