Ingredients
- 4 slices Genoa salami
- 4 slices mortadella
- 4 slices sopressata
- 4 slices pepperoni
- 4 slices provolone (omit for dairy-free option)
- Paleo lime mayo or store-bought mayo (we love Chosen Foods Avocado Oil Mayo)
- Shredded lettuce
- Extra toppings, such as banana peppers, jalapeño peppers, roasted red peppers, and black olives (optional)
- Avocado oil or olive oil
- Apple cider vinegar
- Italian seasoning
- Toothpicks
Instructions
- Step 1: Layer the meat slices from largest to smallest. For the brand we use (Boar’s Head), the order is: Genoa salami, mortadella, sopressata, then pepperoni.
- Step 2: Spread a thin layer of mayo over the stack, leaving a small space at the top of the largest slice to prevent the mayo from squeezing out when rolling.
- Step 3: Add a slice of provolone on top of the mayo about halfway down the stack. Place a small handful of shredded lettuce on the lower half and add any desired extra toppings.
- Step 4: With toothpicks ready, gently but tightly roll the stack starting from the bottom edge of the cheese, tucking in any fillings as you roll.
- Step 5: Secure the roll-up by inserting a toothpick through the outer meat edges to hold everything in place.
- Step 6: For serving, mix 2 parts avocado or olive oil with 1 part apple cider vinegar in a small ramekin. Sprinkle Italian seasoning on top for dipping the roll-ups.
- Step 7: Store any extras wrapped individually in plastic wrap in the refrigerator for up to one week.
Tips & Variations
- For a dairy-free option, simply omit the provolone slice and add extra veggies for texture.
- Try different meats or add fresh herbs like basil for extra flavor.
- Use flavored mayo such as garlic or chipotle to customize the taste.
- Make mini roll-ups by reducing the size of the meat slices for bite-sized snacks.
Storage
Wrap leftover roll-ups individually in plastic wrap and store them in the refrigerator for up to one week. They are great for packed lunches and can be enjoyed cold. No reheating needed, as they are best served fresh with the dipping sauce.
