Feta Marinated with Herbs and Chilli Recipe
Introduction
This feta cheese marinated with herbs and chilli is a simple yet flavorful appetizer perfect for any occasion. Creamy feta is infused with aromatic herbs, spicy chilli, and zesty lemon, all brought together by rich olive oil. It’s easy to prepare and pairs wonderfully with crusty bread.

Ingredients
- 8 oz / 250 g feta cheese, preferably Danish or another creamy type
- 1/2 cup extra virgin olive oil
- 2 garlic cloves, peeled
- 2 tbsp fresh herbs, finely chopped (such as parsley and thyme)
- 1 bird’s eye chilli, finely chopped (or any fresh red chilli of choice)
- 1/4 tsp lemon rind, finely grated
- Black pepper, to taste
Instructions
- Step 1: Infuse the olive oil with garlic by lightly smashing the peeled garlic cloves using the side of a knife. Combine the garlic with the olive oil, cover, and refrigerate for several hours or preferably overnight for the best flavor.
- Step 2: If you’re short on time, mince one small garlic clove finely and stir it directly into the olive oil instead of infusing.
- Step 3: Cut the feta cheese into bite-sized cubes, about 1 cm (1/3 inch) in size.
- Step 4: Place the feta cubes into a serving dish. Scatter the chopped herbs, chilli, and lemon rind evenly over the cheese. Add a fresh grind of black pepper to taste.
- Step 5: Pour the garlic-infused olive oil over the feta and herb mixture. Serve immediately with crusty bread for dipping.
Tips & Variations
- For a milder heat, remove the seeds from the chilli before chopping.
- Try adding other herbs like oregano or dill for variation.
- If you like, add a splash of red wine vinegar for extra tanginess.
- Use a firmer feta if you prefer less creamy texture, but creamy types absorb the marinade better.
Storage
Store the marinated feta in an airtight container in the refrigerator for up to 3 days. Let it come to room temperature before serving for the best flavor. The olive oil may solidify when chilled—simply bring it back to room temperature to liquefy before use.

FAQs
Can I use frozen feta for this recipe?
It’s best to use fresh, not frozen feta for marinating as freezing can affect the texture and make it crumbly rather than smooth and creamy.
How long can I let the feta marinate?
Marinate for at least a few hours to allow the flavors to develop, but overnight in the refrigerator will yield the best results.
