Ingredients

  • 1½ teaspoons turmeric powder
  • 1 teaspoon ground cumin
  • 3 cans chickpeas (15 oz / 400 g each can, drained and rinsed)
  • 2 cans diced tomatoes (14 oz / 400 g each can)
  • 1 cup water
  • ¾ teaspoon salt (or more to taste) + black pepper
  • 1 teaspoon garam masala (optional but authentic)
  • 4 wedges lemon
  • Cilantro and yogurt, for serving (optional)
  • 4 portions naan or basmati rice, for serving

Instructions

  1. Step 1: Heat olive oil in a large skillet over medium heat. Sauté the chopped onion for 3 to 5 minutes until soft and translucent. Add the grated garlic, grated ginger, and red pepper flakes, cooking for 1 minute until fragrant.
  2. Step 2: Lower the heat and stir in the ground coriander, turmeric powder, and ground cumin. Cook for another minute, adding a splash of water if the pan begins to dry out.
  3. Step 3: Add the drained chickpeas to the skillet, along with salt and black pepper. Stir well to coat the chickpeas in the spices.
  4. Step 4: Pour in the diced tomatoes and their juice, then add the cup of water. Stir everything together and let it simmer gently for 20 to 25 minutes, until the sauce thickens and flavors meld.
  5. Step 5: Turn off the heat and stir in the garam masala. Taste and adjust seasoning if needed. Serve hot with lemon wedges, fresh cilantro, and yogurt if desired, alongside naan or basmati rice.
