Ingredients

  • 1 kg / 2 lb frozen peas
  • 125g / 8 tbsp unsalted butter
  • 2 garlic cloves, minced
  • 2 medium eschalots, finely sliced (baby onions or shallots)
  • 2 cups low-sodium chicken or vegetable stock/broth (use vegetable stock if serving with fish)
  • 1/4 tsp salt
  • 1/8 tsp white pepper
  • 1 small handful mint leaves (optional)

Instructions

  1. Step 1: Melt the butter in a saucepan over medium heat. Add minced garlic and sliced eschalots, then sauté for 3 minutes until soft but not golden.
  2. Step 2: Stir in the frozen peas and stock. Increase the heat until it simmers, then cover and reduce to medium heat. Let it simmer for 2 minutes.
  3. Step 3: Remove 1/3 cup of the liquid from the saucepan and set it aside.
  4. Step 4: Transfer the peas and remaining liquid to a food processor. Add salt, white pepper, and mint leaves if using. Blitz on high for 1 minute until smooth.
  5. Step 5: For an extra smooth texture, press the puree through a mesh colander using a rubber spatula.
  6. Step 6: Adjust the consistency by adding the reserved liquid as needed to achieve a soft, dolloping texture. Taste and add more salt or pepper if desired, keeping in mind the puree should remain mild in flavor.
  7. Step 7: Serve the puree warm. You can dollop or smear it onto plates, or serve it in bowls for guests to help themselves.
